Well, the "Daniel Fast" has officially ended. I have very much missed my internet, but not near as much as I missed my Diet Pepsi and meat. I love meat! I did discover that cooking without meat takes a lot of imagination and planning!
I found a couple of new recipes that will probably become staples "Two-Cheese Macaroni Bake" (think cheese lasagna with cheddar cheese and elbow macaroni) and "Lentil-Wild Rice Soup" (very hearty with a slight Mediterranian flavor).
I don't think I want any more green salads for a while. And I definitely have eaten my last bite of broccoli and cauliflower for the year! I made meatloaf and augratin potatoes for supper tonight! Meat is such a wonderful thing! Did I mention that I love meat????!!!
On a more serious note, I have discovered that there are definitely some things I need to work on spiritually. I didn't realize how much other reading I was doing in comparison to my Bible reading until all I had to read was my Bible and a great Bible Study book "Focused Light". In 21 days I read all of the New Testament except for the Gospels. And I wasn't speed reading!!!! I, also, have decided that I really need to get into a Bible Study group or create one. I need some challenging to keep me from just drifting. (I'm very good at drifting!!!)
Well, I'm going to go read my email and catch up on that end of things. Hope everyone has a great evening!!!

Welcome back from a fellow carnivore!! :-) I've missed your posts, Theresa! I kinda of keep up with Mt. Vernon friends through the blogs. It is so good to have you all back. We are hoping to get up to Mt. Vernon over the holidays. Since I now do music at church fulltime, we've not been able to get away as often. We miss you all, but think of you, pray for you, and read you here!! :-)
