A New Recipe

As usual, when I don't feel well, I gravitate to soups for food. I found a new recipe and tried it last night. It was WONDERFUL! So, I'm sharing the recipe with you:

PESTO TORTELLINI SOUP

1 small onion, chopped fine
3-4 cloves garlic, minced
2 Tbs. butter
12 cups chicken or vegetable broth
2 pkg (9 oz) frozen tortellini
3-4 cups frozen mixed vegetables
1/2 cup pesto
Freshly grated parmesan cheese for topping

In a large pot, saute onion, garlic, and butter until onion is translucent. Add broth and bring to a boil. Add tortellini and cook at a boil for about 10 minutes. Reduce heat and add vegetables. Simmer for about 20 minutes or until vegetables are tender. Add pesto and stir thoroughly. Serve with parmesan cheese. Makes 10-12 servings. Refrigerate leftovers.


My one disappointment with this recipe is that it cannot be made in a crockpot, but it doesn't take long to make. I don't know if it would freeze well. Sir Nottaguy-Imadad liked it well enough to eat seconds, even though he's not a real fan of pesto or tortellini.
