I'm ending 2012 by trying a new recipe. It's amazingly easy and soooo yummy that I just had to share it with all of you!
Until a couple of months ago I had never heard of a Hot Brown. When we were out to eat with some folks at Allison's Finer Diner, my taste buds were very pleasantly surprised with all the goodness! Evidently, this marvelous concoction was introduced to the world by the Brown Hotel in Louisville, KY.
I did some searching and found several recipes, all pretty much the same. However, the Hot Brown was designed to be made in individual serving casseroles. Since our family does not own these, I kept searching and came upon this casserole version that appealed to my hungry heart. The next thing I needed was enough turkey to make it. Just before Christmas, I was blessed with the largest turkey breast I have ever seen in my entire life!!!! (I promise, this was larger than some hams I've seen!) Now, the fun could happen.
Here's the recipe for all of you to try or just read and nod:
Hot Brown Casserole
Preheat oven to 350F. Spray or lightly butter a 9"x13" casserole dish.
1 pkg. Turkey Stove Top Stuffing
1/2 stick butter or margarine, melted
1 1/2 Cups boiling water
3 Cups cubed turkey pieces
1 Cup diced tomato
Mix stuffing, butter and water together and set aside for 5 mins. After fluffing slightly, put stuffing into casserole dish and pat into a crust shape slightly up the sides. Top with the turkey pieces. Top turkey with tomato pieces.
Sauce:
1/2 Cup butter
1/2 Cup all-purpose flour
3 Cups milk
6 Tbls. grated Parmesan cheese
1 egg, beaten
Salt and pepper
Additional Parmesan
3/4 Cup bacon, browned and chopped.
Melt butter in a medium sized saucepan over medium heat. Stir in flour with a whisk and continue to cook and stir until in begins to brown slightly. Gradually whisk in milk so that no lumps form, then bring to a boil and allow to thicken slightly, stirring constantly. Mix in Parmesan and then egg, immediately remove from heat.
Pour sauce over casserole. Sprinkle lightly with salt and pepper and some additional Parmesan cheese. Top with bacon pieces. Bake at 350F for 30 minutes or until top is lightly browned.

I'd probably just use leftover cornbread dressing instead of the stuffing mix. sounds like a good way to use up leftover turkey too!
It is wonderful! My hubby was a little hesitant about it, but he ate 2 full servings. (He's anti-sauce/gravy, but he got over it quickly!)

It was good. We both enjoyed it. Now we can't have it again for months and months. Wahhh...
