Okay!!! I am absolutely in love with this new recipe!!! It's easy, it's fast to fix, and it's not expensive---AND! IT! TASTES! LIKE! IT! WAS! CREATED! IN! HEAVEN!!!
I made it Thanksgiving morning to take to my BIL's house for dinner, and everyone that tasted it loved it. (I know, it's not always a good idea to try a new recipe to take somewhere when you've never tasted it before, but, hey, it has pumpkin!!)
PUMPKIN PIE CAKE
1 pkg. yellow cake mix
1/2 cup melted butter/margarine
3 eggs
1 16 oz. can pumpkin
1 1/4 cups white sugar
1/2 tsp. salt
2 tsp. cinnamon
1 can evaporated milk
1/2 tsp. ginger
1/4 tsp. cloves
3/4 cup soft butter/margarine
Set aside 1 cup of dry cake mix.
Crust: mix remaining cake mix with 1/2 cup melted butter and 1 egg. Will form a slightly sticky dough. Press into a greased 9 x 13 baking pan, pressing up sides about half way.
Filling: Mix together 2 eggs, pumpkin, 3/4 cup sugar, salt, evaporated milk, ginger and cloves. Pour over crust.
Topping: Blend reserved dry cake mix, cinnamon, 1/2 cup sugar and cut in 3/4 cup soft butter. Mixture will be crumbly. Sprinkle over top of the filling.
Bake at 350 degrees for 40-45 minutes. Let cool at least 30 minutes before serving. Wonderful with whipped topping or cinnamon ice cream!!
I can guarantee that I will be taking this to the next food day at work, the family Christmas get-together, and as many other places as I can think of!!! YUMMY!!!

Sounds wonderful. But I am barred from eating anything that tastes good until I am able to run again. I gain weight by just reading recipes! :)
