How come no one ever told me how easy kabobs were to make??? Or how wonderful they taste??? Or that my husband would go back for seconds saying "Those are pretty good!"???
I wanted something quick and easy for supper last night. I had seen this "recipe" for smoked sausage kabobs in Country Living. I just happened to have a package of smoked sausage in the freezer. So, I decided to pick the rest of the ingredients up at the grocery and see what happened.

Smoked Sausage Kabobs
1 lb. smoked sausage, cut into 1 1/2" pieces
1 1/2 cups fresh pineapple chunks
2 bell peppers, cut into 1" strips (I used orange and red)
1 vidalia onion, cut into eighths
Load your skewers by alternating veggies, pineapple and meat, but try to always put pineapple next to the meat. Grill on low heat for about 15 mins., turning skewers occasionally. Serve with plain white rice.

Did you notice something??? There's no added salt or seasoning. AND it doesn't need it! Sir Nottaguy-Imadad didn't even reach for the salt shaker! (Miracles do still happen!)
This will definitely make a repeat performance on our dinner table!

I like mine with chunks of chicken and roma tomatoes, but I do like to drizzle italian dressing over top as well.
I have to admit that it was good, and I generally don't like anything that isn't "meat & potatoes".
You know, Theresa, I've never fixed kabobs before either but I am just going to have to do it! I have skewers and usually have everything I need on hand to make them, so I am just going to go for it one of these days and soon!!
We make them with chunks of beef, marinated in the juice from a can of pineapple chunks for a couple of hours. In addition to the peppers, onions, and pineapple, try mushrooms (yum), yellow squash, and (I can't spell it) those green squash things that proliferate in the late summer and start with a Z.
