What Happened, MotherT?

Well, I'm not really sure, but somewhere I kind of lost my blog thoughts.  I remember posting about Eva's illness, and then I disappeared.  Did anyone see me wandering around???  Oh, well, I'm back now.

About the recipe I promised, during our Daniel's Fast, I was wanting chili so badly, and I REFUSE! to use fake meat crumbles! So, I decided to get a little creative, and came up with a meatless taco soup that was a huge hit not only with our family, but with several other families at church!  So, here goes:

Meatless Taco Soup

1 lg. can crushed tomatoes
1 can water
1 can black beans
1 can whole kernel sweet corn
1 pkg. taco seasoning

Stir all of these ingredients together in a pot.  Heat on medium until bubbly.  Serve with shredded cheese, sour cream and tortilla chips. The soup is thick enough to dip the chips in, if that is your preference.

Our assistant pastor's 2 yr old daughter kept begging for more "tato toup" days after she ate it!

In other news:

Eva is doing much better.  She's still wheezing a little, but at least now she can sleep laying down and we don't have to use the nebulizer as often.  Thanks to all of you who prayed.  Having a sick child/grandchild is difficult.

My mom is battling bronchitis again.  We are attempting to keep it from turning into pneumonia, but she's giving the nurses fits about sitting up in her chair or moving around.  I really dislike having to turn into the "mean" daughter and making her do things against her will, but that's where I am again.

My orthopaedist told me yesterday, that, short of getting surgery approved (and that's not looking good), I've probably reached my maximum improvement.  That's frustrating because I am still in so much pain most of the time.  I have to spend several hours each day off of my leg, or with it elevated, to prevent swelling and intense pain, and Worker's Comp is expecting me to be able to return to working.  I don't know of any employers that are going to allow me to sit with my leg elevated as I attempt to work.

Well, I've got a bunch of housework to attempt to get done today and some letter writing and some insurance stuff to investigate.  Hope you all have a wonderful day and find many things to smile about today!

I make something similar with the taco soup! But I use ranch dressing mix, too...and I put in whatever beans I have handy (and hamburger, of course. ;) )
