What's For Supper??

I needed to use up some leftover grilled chicken, and decided to modify this recipe to do so:

Hearty Chicken Lentil Stew
2 tsp. olive oil
1 1/2 C cubed chicken
1 small onion, diced
1 each yellow & red bell pepper, diced
4 cloves garlic, minced
3/4 C lentils, uncooked
1 1/2 C chicken broth
1/2 C water
1 can diced tomatoes
1 tsp. ground ginger
1/2 tsp. ground coriander
1/4 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. pepper

In large pot, heat oil, if chicken is uncooked, saute chicken and raw vegetables for 5-7 minutes, until onion is translucent.  Add remaining ingredients.  Bring to a boil, then reduce heat. Cover and simmer for 40-50 mins. until lentils are tender.

I'm serving this with hot biscuits, but as it was cooking I got to thinking some freshly made Naan Bread would certainly taste wonderful with it!
