In the interest of keeping things "new", I decided to try a new recipe for supper tonight. It was so yummy, I must share.

Curried Lentils with Chicken
1 cup dry lentils
3 cups water
1 tbls. olive oil
1 sm. yellow onion, minced
2 tsp. curry powder
2 cans Ro-Tel diced tomatoes with chilies
4 cups cooked, diced chicken
1/2 tsp. salt
6 oz. plain yogurt
In a medium saucepan combine lentils with water. Bring to a boil, then reduce heat and simmer until tender, about 30 mins. Drain and rinse under cold water.
In a large saucepan heat oil. Add onions and saute until soft, 2-4 mins. Add curry powder and continue cooking about 1-2 mins. Add lentils, Ro-Tel, chicken and salt. Cook, stirring often for 10-15 mins. Remove from heat and add yogurt.

I served this with flat bread that I had buttered and browned in a skillet. (Similar to Indian Fry bread.) I did decide that the next time I make this, I will process the Ro-Tel in my blender before I add it to the mix. My husband really prefers not to bite into chunks of tomato or chili. This has a little spice to it, but not enough to make you start grabbing the Tums.
